About Kristen Beddard

Kristen Beddard is the American founder of The Kale Project, a successful initiative to reintroduce kale to France. Through her work with local French farmers, le chou kale can now be found at various outdoor markets and supermarkets. She is the author of the French gardening and cookbook Savez-vous manger les choux and a contributing author to We Love Kale: Fresh and Healthy Inspiring Recipes. She resides in Paris with her husband and daughter.
